Oh, so I'm supposed to fanboy too I guess. Well here, I'm laying my cards on the table.
The reason why I tend to prefer the 2A03 is mostly that it's the basic NES sound, and that sound expansion was not that common even in Japan (Not counting FDS, because that was sort of "built in" and every game could utilize it)
I tend to prefer authenticity, that's why it's rare to see me using 23566kB of DPCM samples and whatnot. And I was driven to that mostly because of the GXSCC converted MIDI bullshit, and so I really want it to sound game-ey when I make music, be it originals or covers.
Expansion chips are nice to mess around with, because some covers would have to suffer way to much if I were to squeeze them into 4 or 5 channels. I actually prefer the N163 when it comes to expansion chips, because let's look at rationally: It can do a lot of things, other chips do naturally. It can do the same things as the MMC5 or the VRC6, and FDS I wouldn't really say because it's only 4-bit and not 6. But you can do more with it if you want to, like more detalied pulse-width modulation (especially if 64 step waves will be supported some time in the future) and some people have made things with it that put even the HuC6280 wavetable sound to shame. Oh, and it's also the best go-to now for GB emulation as well.
I don't think that Warheart was trying to say that you have problems if you're a fanboy. I think he senses the general reason for liking 2A03 being "it's what I remember most/grew up with", and that it comes off as sounding like something a dedicated fanboy would say. Expansions are one of the main things that drew me to Famitracker in the first place. I had no idea such extensions existed before then, so it was a big surprise to me at the time. When I first started out, making use of the expansions was what I had my mind set to. Then I discovered the works of Tim Follin and other euro NES composers and I took a different direction. I think that was for the better, because it showed me how much you can put into sound design when restricted to just a few channels. I mainly write original music, so it also motivated me to improve my composition skills. In other words, another reason I chose 2A03 is because it was a great building ground for me and it allowed me to focus on solidifying my sound design and composition. Even now I'm still trying to build up my sound design. But hey, everyone is entitled to their own preferences.

@Stratelier I never said that VRC6 was a bad chip in terms of sound. Try to understand what I wrote before. Is it really that hard to be open minded?
Well, I'd say his opinion is just as valid as mine in this case, it's just different. I also don't see the problem with preferring 2A03 due to nostalgia, actually, that's what I'd expect the majority of the users to do. At least the ones who grew up with the NES.

If I have to choose between 2A03 and expansions, it's 2A03 by a long shot. Much more versatile overall. However, I think it's silly to have to choose between the two, since expansion chips were meant to augment the sound capabilities of the Famicom, not serve as a replacement.
Between the expansions, I don't really have a preference. I've mostly dabbled with MMC5 and VRC7...MMC5 is a nice simple way to get more harmonic content out of the 2A03 "sound". N163 seems like the best choice if you're trying to get the most out of a single expansion, but again, that's not really what they were intended for.

My favorite NES instrument is the 25% wave, actually... but I'm not sure we're exactly posting on the same wavelength right now. (lol)
BTW, after listening to a songlist on YouTube, I never realized (back in the day) how the SMB3 boss tunes use Triangle in a lead role (and how that Bowser tune is also pretty DPCM heavy).
